Fried Eggplant
Ingredients
1 eggplant
Flour
2 large eggs (add more if needed)
Bread Crumbs
Cooking oil
Salt & Pepper to taste
Directions
Peel eggplant
Slice eggplant
Salt eggplant, also known as purging; this draws out the moisture that can cause eggplant to taste bitter and soggy
Coat the eggplant in flour
Dip the coated eggplant into beaten eggs
Dip into breadcrumbs
Fry until golden brown on all sides
For a vegan friendly option:
Skip the egg and coat your eggplant in olive oil before dipping them into vegan breadcrumbs or just with flour!
For those of us trying (trying desperately) to be healthy, you can skip the frying! Once you have your eggplant fully coated spread them out on a baking sheet and drizzle a nice amount of olive oil on them and toss lightly until all the eggplant is coated. Pop in the oven for about 10 minutes on 375 or until golden brown.
Serve eggplant with fresh marinara along side spaghetti and marinara for Eggplant Marinara!
